finished in a virgin oak hogshead with a heavy toast and a medium char
sugary tea and hint of high quality VSOP cognac
the palate seemed sweeter –but with a dry mouth-feel as the smoke thinned
sweet chilli and muscovado on toasted staves – lip-smacking

Abundant butterscotch, creme brulee, apple sourz, fizzy melon cocktails, sugar syrup, toffee apples and sweet mulled cider. Water softens and dries things up a little. Lots of fresh linen and fabric, curry leaf, dried herbs, menthol toothpaste, green tea with lemon, hawthorne, butter biscuits and honeyed porridge. The mouth continues the apple theme
